Preheat the oven to 375°F, and place an oven-safe wire rack on a foil-lined baking sheet.
Lay 8-12 slices of bacon on the prepared wire rack.
Lightly coat bacon slices in apple cider vinegar.
Sprinkle and pat down brown sugar on the bacon.
Sprinkle on black pepper and other optional ingredients.
Transfer the pan to the oven to bake.
FOR REGULAR CUT BACON: Bake 20-30 minutes, checking occasionally for smoke from burnt sugar on the bottom of the pan.
FOR THICK-CUT BACON: Bake 30-40 minutes, checking occasionally for smoke from burnt sugar on the bottom of the pan. You will most likely need to change the foil on the pan part of the way through.
Let the bacon pan cool for 5-10 minutes, then use tongs to transfer it to a wax paper-lined baking sheet or plate. Gently soak up excess grease if it is noticeable, otherwise, just let it fully cool at room temperature.
Once it is fully cooled, rub a little more brown sugar on both sides to put on the sweet finishing touch.
